Foodie Friday – Healthy Banana & Strawberry Muffins

Its been ages since I’ve done a ‘foodie Friday’post! But as I am trying to use up everything in my cupboards and be less wasteful, I have been cooking a lot more and thought I would share this deliciously easy and somewhat healthy recipe with you.

Makes 12 Large Muffins.


2 Eggs
1 Stick/113g/1/2 Cup of butter
2 Overly Ripe Banana’s
5 Strawberries (add more or less depending on what you want. I used 5 because thats just what I had left in the fridge)
3 Drops of Pure Vanilla Extract
2 1/4 Cups/295g Self Rising (raising if you’re British!) flour
3/4 Cup/150g Brown Sugar
Tsp Ground Cinnamon
Tsp Nutmeg
4 Tbsp Milk

1. Preheat Oven to 350f/180c/Gas Mark 5

2. Mush up the banana’s in a mixing bowl and add in the eggs, vanilla extract and melted butter. I put my butter in the microwave for 15 secs to make it soft.

3. In a different mixing bowl combine the flour, sugar, cinnamon and nutmeg. After those ingredients are fully combined FOLD in the strawberries.

4. Now add both mixtures together and stir it gently until everything is mixed but don’t whisk or over mix it. It is going to appear a bit lumpy from the banana’s and strawberries. It was at this point that I added the milk as I found it a little too solid of a mix.

5. Spoon the mixture into 12 muffin cases and bake in the oven for 20 mins or until they’re fully baked. I like to get a toothpick to stick in the middle of them, if it comes out clean they’re done, if there is batter on the they need a little longer!

And ta da! You should have breakfast for the next week.
